  • Season chicken with salt and pepper. Heat olive oil in a large, covered cooking pot over medium-high heat. Brown chicken in the hot oil, 5 to 7 minutes.

  • Add sausage to the pot and continue to cook until lightly browned, about 5 minutes more. Stir in garlic and cook for about 2 minutes. Add chicken broth, heavy cream, pasta, and Cajun seasoning. Stir together and bring to a simmer over medium-high heat, about 5 minutes.

  • Reduce heat to low, cover the pot, and cook until pasta is tender, 15 to 20 minutes.

  • Remove the pot from heat and stir in Parmesan cheese. Stir in chopped parsley and sprinkle with additional Cajun seasoning if desired.

This wasn't amazing, but it was good & there wasn't much left. 'Used leftover chicken, added onion & pepper strips. Surprisingly, it didn't have that one-pot pasta texture, gummy. Absolutely delicious! Tasted much like a Cajun favorite pastalaya but with a nice creamy base. Important to note that you'll want to skip using a nonstick pot because you'll want to be able to scrape the sides and and flavor the sauce with all the debris. I made it but I had to make some accommodations. I used 1 tablespoon of seasoning, added a bag of broccoli normandy veggies (steamed for 4 minutes on microwave), and added a cream of mushroom soup because it wasn't creamy enough. Read More

This was delicious! I followed the recipe but did add mushrooms and broccoli. That's one of the great things about this one, you can customize it how you like by adding your favorites! I think the amount of heat in the dish depends on your cajun spice you use. I used 1 1/4 T of "Slap yo mama" cajun spice and it was REALLY spicy! I will use maybe 3/4 T next time. I did put in a heaping T of sour cream to mellow it out and I think it added a little thickness as well which was nice. Overall a delicious meal and one you can definitely customize since the base of the recipe is great! Read More
